Founded in 2022, Le Gabrielle is a small, locally owned business led by our founders, Carlos Jimenez and his wife, Angela and focuses on a deep love for food, family, and a dedication to serve others.
Our founder, Carlos Jimenez, moved from Colombia to the United States more than 30 years ago to follow his lifelong passion for cooking. When Carlos came to the United States, he came with no family, no connections, and no money in his pockets; just a dream to make a better life for himself.
Before opening Le Gabrielle, Carlos worked nearly every position in the food industry, developing new skills and experience with each passing year — from dishwasher, line cook, chef, general manager and eventually culinary director. Each role taught him invaluable lessons about teamwork, hospitality, and the joy of making others smile as they bond over great food.
Over the years, his journey took him through restaurants of every style — from sushi and hibachi kitchens to Spanish tapas bars and Latin American eateries — shaping a diverse culinary background that continues to inspire the dishes and flavors at Le Gabrielle. Each experience helped shape his vision of what great food, genuine hospitality, and meaningful dining should feel like.
After decades in the industry, Carlos dreamed of building a place of his own — one that captured the warmth, creativity, and love for cooking he shared with his late mother, Gabriela, who always encouraged him to follow his dreams.
Today, Le Gabrielle stands as an honorary tribute to the memory of Gabriela by celebrating a love for the family, friends, and communities who have helped make us who we are today.
